The Best Pumpkin Chocolate Chip Cookies on the Planet

Lofty claim? Possibly. But I just know you'll agree with me once you make these. This recipe is from a wonderful friend Jenny Rowley. Otherwise known as J-Ro. These are so moist, flavorful and best of all not too pumpkiny (is that a word?). I am a person who doesn't like pumpkin pie, and until I tried these, I hated pumpkin cookies. Every pumpkin cookie I've ever tried was either too dry, or had way too much pumpkin for my liking. But these.. these are amazing. Wherever I bring them I pretty much without fail get asked for the recipe. They are even better the second day.

You will need chocolate chips, cinnamon, pumpkin, baking soda, baking powder, oil, salt, nutmeg, ginger, vanilla, flour and brown sugar. No eggs? No butter? Yes, you are reading right. So these are in a sense "heathy (er..ish)" cookies.

Mix the brown sugar, pumpkin, oil and vanilla. Then add your flour, soda, baking powder, salt, cinnamon, nutmeg, and ginger. After those are well incorporated add your chocolate chips.

Spoon onto a cookie sheet and bake for 12 min at 350.

Let these cool for five minutes and then dig in! These are so good warm, but we like them best the second day.

side note: these are best enjoyed while listening to christmas music curled up on the couch (though my husband thinks it's much too early for that).

Best in the World Pumpkin Chocolate Chip Cookies:

Ingredients:
1 c. brown sugar
1 c. pumpkin
1/2 c. oil
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
milk chocolate and semi sweet chips (desired amount)

Directions:
1. Preheat oven to 350 and mix brown sugar, pumpkin, oil and vanilla well in mixer.
2. Add all other ingredients except for the chocolate chips and mix until just incorporated, do not over-mix!!
3. Fold in chocolate chips. I probably add about 1/2 c., but it's really about how much you prefer.
4. Spoon onto a greased cookie sheet and bake for 12 minutes.

Halloween Cookies

I thought I'd get these posted before 'frankenstorm' hurricane sandy hits us. We're supposed to be without power for a few days here in the district, so we've been preparing here! Last year I never got around to making Halloween cookies, so I've been looking forward to this for twelve months.

I loved the way these turned out, they were really simple cookies to make in comparison to the last few cookies I've done.

I think my favorite were the cauldrons :)

Prayers for all those so far effected by the hurricane and to all else, stay safe.

Happy Halloween!

Candy Corn Cookies

I really don't like candy corn. I think they're gross. But they are pretty cute and signify Halloween, so I thought I make something I actually like to eat in the form of candy corn!

My favorite were the ones with Disco dust (I ran out before I could make all of them sparkle..).

Lots more Halloween cookies soon to come!

Halloween Disney Villain Painted Cookies {Scar, Hades & Maleficent}

That's a mouthful.

In high school I took a painting class in which I got a C+. It was really hard and I received my lowest grade of the semester in painting; a class in which I expected to get an "easy A". Mr Aitken expected perfection and my paintings were far from perfection. So, I accepted the fact that I didn't like painting and painting didn't like me. But I decided to give it another shot. I'm so glad I did! These were so fun to do.

I've seen painted cookies and I've been DYING to try them! I saw this painting and also this one on Pinterest and knew I had to make it into a cookie!! I came up with Hades on my own.

Scar

Maleficent.. as you can see the "paint" is still wet. I'm not the most patient person.

Hades

I will definitely be doing more painted cookies in the future!

*I noticed the site for the original Maleficent painting is no longer up, if anyone knows the artist let me know so I can link his or her page!

Sangeet Henna Cookies

Sangeet is the celebration before a hindu wedding.

There is music, dancing, food and a henna artist. So of course what better than henna cookies to go with??!

12 dozen, that is. It took a while. This picture is missing about 75 cookies.

The details were so fun.

For inspiration I looked at a lot of henna tattoos.

One of my favorites was the Elephant.

I LOVED doing these cookies! They are now on their way to NYC.
Thanks for your order Neha!
